- 150 gram digestive biscuits
- 100 gram melted butter
- 2 tbsp sugar
- Filling -
- 1/4 cup fresh cream
- 300 gram cream cheese
- 25 gram sugar
- 1/4 cup hung curd
- 200 gram condensed milk
- 2 tbsp corn flour
- 2 tbsp water
- 2 teaspoon lemon juice
- 1 tsp vanilla essence
- Mulberry compote to serve
Instructions to make New York Style Eggless Cheesecake
- Add digestive biscuits and sugar to a mixer jar and grind it to a fine powder. Now add melted butter to it and mix everything well. Grease a 7 inch spring form baking tin and line it with the baking paper. Now add the prepared biscuit crumbs to the tin and press it to make an even layer. You can use a glass or a bowl to press it evenly. Bake it in a preheated oven at 180 degree for 8 to 10 minutes. Let it cool down completely.



- Add fresh cream to a bowl and beat it with electric beater or a whisk for 2 to 3 minutes. Whisking will require more time. Now add cream cheese to it and beat it again. Now add hung curd, sugar, condensed milk, lemon juice and vanilla essence to it and mix everything well. Add corn flour and water to make a slurry and add it to the cream cheese mix. Beat everything well until smooth.



- Add this mixture on the biscuit crust in the baking tin and tap it lightly. Now wrap the tin with foil to avoid any water seeping into the cheesecake while baking as we are baking it in a water bath. Add hot water to a bigger baking tin and put the prepared cheesecake tin inside. Now bake it in a preheated oven at 180 degree for 40 minutes. It should be slightly golden on top when baked. Now turn off the oven and leave the cheesecake inside the oven for 20 minutes before taking it out.


- Now take the cheesecake out of the oven and out of the water bath. Remove the foil from the sides. Let it cool down completely. Cover it with a cling film and let it chill in the refrigerator for 4 to 6 hours. Run a knife on the sides before unmolding it. Cut it into desired shape. Dip the knife in hot water before cutting each piece to get it cut neatly.



- Serve chilled cheesecake topped with mulberry compote or any other fruit compote.
