  3. 1/2 tbsp sugar
  4. For biscuit base
  5. 80 gm digestive biscuits
  6. 40 gm melted butter

  10. 50 gm caster sugar
  11. 1 tsp mango essence
  12. 1 cup mango puree

  18. 120 gm (3/4 cup) mango puree

Instructions to make Mango Cheese cake

  1. Mango puree:- Grind the mangoes to smooth puree without adding water. Add 1/2 tbsp sugar and mix well. Cook on medium flame until it starts bubbling. Remove from flame and cool completely.
  2. To make biscuit base:- Grind biscuits in a processor. Add melted butter and combined well. Transfer to a 4" loose bottom cake mold with the help of a spoon. Press it nice and tight. Refrigerate it for 30 minutes.
  3. To make the cheesecake:- In a bowl combine cream cheese and caster sugar mango essence and mango puree. whisk it well until well combined and lump-free.
  4. Add the the whipped cream little by little and mix it.
  5. Bloom 2 tsp gelatin powder with 2 tbsp water, wait for 5 minutes, and microwave for 15 sec. Mix well to make sure the gelatin completely dissolved.
  6. Then pour into the cream cheese mixture and mix well. Then pour it into the prepared mold on the biscuit base and cover it and refrigerate it for 1 hrs.
  7. 🔸To make Mango jelly for topping:- Bloom 1.5 tsp gelatin powder with 60 ml cold water wait for 5 minutes and microwave for 15 sec. It is dissolved completely.
  8. Add it with 3/4 cup mango puree and mix again to combine. Pour the gelatin mixture gently on the top of the cheesecake. Cover it and chill for 3 hrs.
  9. Use a hot towel to unmold. Wait about 10 sec and unmold the cheesecake. Mango cheesecake is ready.
