- 1 tsp Vanilla Extract
- 1 small can crushed Pineapple (drained)
- 2 1/2 C Sweet Whipped Cream
Steps to make Pineapple "Cheesecake"
- Preheat oven to 350 Deg. Mix all Crust ingredients together in a 9x13 pan. Once mixed, press mixture into pan bottom and sides, if needed. Bake in oven for 15 minutes. Remove from oven and let cool.
- In a mixing bowl, mix cream cheese and powdered sugar, adding sugar a little at a time, until it is fully incorporated and cream cheese is smooth.
- Add Pineapple and vanilla and lightly mix to incorporate.
- Fold whipped cream into pineapple cream cheese mixture, being sure not to over mix, but fully incorporate. Cover and Chill for 15 minutes.
- Use fork to break and crumble the crust in the 9x13 pan. Remove and reserve 1/3 of the crumbles. Spread remain crumbles evenly on the bottom of pan.
- Remove filling from refrigerator and use rubber spatula to spread evenly over crumbles in 9x13 pan.
- Use remaining 1/3 of crumble crust to sprinkle top of filling. Cover 9x13 pan and chill for at least 1 hour.
- Keep chilled until ready to serve. Makes 12 regular servings. Or, if you're like me, 2 servings. One for tonight and another for breakfast. :)
