Mini Cheesecake Cups! Aren't they looking gorgeous? These are made by me using Parle-G Biscuits as the base. And for the serving idea, I have used Black Mulberry Compote as well as a few pieces of Dragon Fruit on top for a more fruity extravaganza. You will definitely love this Cheesy Cupcakes for sure. The most awesome part was that it was made with all the ingredients that are easily available in India. Nothing too much fancy nor difficult ingredients at all. - 300 gm D'lecta Cream Cheese
- 150 gm Golden Mark Whipped Cream
- 2 tbsp Cornflour
- 1/2 cup Powdered Sugar
- 2 Eggs
- 2 tsp Vanilla Essence
- 1 tbsp Lemon juice
- FOR THE BASE-
- 120 gm Parle-G Biscuits
- 3-4 tbsp melted Butter
- 2 cups Mulberries
- 3-4 tbsp
Steps to make Baked Mini Cheesecake Cups with Black Mulberry Compote
- First of all, make the base ready for these gorgeous goodies. Process the Parle-G Biscuits into a fine powder and stir in some melted Butter. Mix well and press into the cupcake liners in the Muffin pan. Refrigerate them for a good 10-12 minutes until we make the Cheesecake mix ready.

- Preheat your oven on 180° keeping the timer for 40 minutes so that it gets a little preheating time. For the Cheesecake mix, blend Cream Cheese, Whipping Cream, Sugar, Lemon juice, Eggs and the Vanilla Essence together until well combined.


- Now scoop out this mix onto each cupcake liner in the pan as seen in the picture. Bake them in this preheated oven for about 25 minutes or so. Keep an eye on them so that they don't get burnt. They usually get done in 22-25 minutes. Different ovens have different temperature settings, so please keep an eye on them.


- That's it. As simple as that. While the Cheesecake Cups are being baked, prepare the compote by cooking the Mulberries on a low to medium high adding some Sugar. Cook until soft and mushy with a nice sheen or glaze. Keep it aside until use.



- Bake your Cheesecake Cups in batches of 2 just as I did. After they are done, cool down a bit before serving them topped with the lovely looking Mulberries Compote and Dragon Fruit. Dig into them right away. Enjoy!
