- 1 cup icing Sugar
- 3 tsp Gelatin
- 1/4 cup water for gelatin
- For topping
- 1 packet Mango jelly
- 1 cup water
- 2 drops lemon juice
- Strawberries
- Mint leaves
- 1 mango for garnishing
Instructions to make Mango cheesecake
- For crust :
I used 9 inch spring pan for this lined with butter paper and grease it with butter and sides too. - Crush biscuits in chopper with butter and milk Then put in the greased pan and spread equally by pressing it, keep in fridge to firm for 15_20 mins

- For filling :
Make mango puree and keep aside - Dissolve gelatin in warm 1/4 cup water and keep for 5 mins then microwave for just few sec and mix well, or cook on double boiler for few sec until no granules. This is important for cheese cake to set.
- Beat cream to fluffy. Add cream cheese in it, sugar mango puree and blend well. Taste the sweet ness. Add gelatin and mix again.

- Take out the pan from fridge if firm then pour this cream cheese mixture on it and spread. Now cover with foil and keep it overnight or freeze for an hour or till firm

- For topping I used quick method of using mango jelly with few drops of lemon juice. We can also make it by mango puree cooked with gelatin and sugar.

Dissolve 1 _1/2 packet mango jelly in 2 cups water n cook. Add 2 drops lemon juice in it, Cool a bit. Take out pan and pour this cool jelly on it and spread evenly by tilting pan.

- Put it in fridge till jelly sets.
- Meanwhile make mango chunks for topping I made flowers from mango strips to give a classic look. Cut strawberry Length wise. I also saved some whipped cream for topping. Decorate as you like.

- While taking out from spring foam pan be careful. Put the cake pan on serving platter. First insert a clean knife on edges and slide it round. Then open the pan knob.
