Bake for 18 minutes until center barely move. Remove from oven, cool on a wire rack to room temp. Cover pan & refridgerate at least 3 hours
- Run a thin knife around the edge of each cheese ate. Carefully remove cheesecakes from pan, place on a platter & chill until ready to serve.
- Combine sugar & 2 tbls water in a med heavy sauce pan over med-high heat; cook until sugar dissolves stirring gently 3 minutes. Continue cooking without until it's the color of light brown sugar. Remove from hear; carefully stir in buttey & milk ( caramelized will harden & stick to spoon ) Place over med-high heat until caramelized sugar melts. Bring to a boil; cook 1 minute. Remove pan from heat; cool Carmel to room temp. Cover & chill 1 hour until slightly thickened. Spoon about 1 tbls. over each cheesecake. Sprinkle each W/ flake salt.
